Of the parks you've mentioned, only Hurricane Harbor is closed for winter. The others remain open all year. Since December is considered off-season, each park may have one or more attractions closed for refurbishment. It is impossible to know a year in advance what attractions may or may not be open (unless there's a MAJOR refurbishment that closes the attraction for a lengthy period). In general, since it is the Christmas season, each park will attempt to have most of their attractions open and operating.

Theme Parks in Southern California are open all Year with the exception of the Water Parks. So everyone on your list with the exception of Hurricane Harbor will be closed. December, especially around the Christmas Holidays are a peek time for them and they try to have as many rides as possible available. However, there is no guarantee that every ride in every park will be open, in fact the only guarantee is that you can guarantee that some rides will be closed. For example even though Disneyland is in a peak period right now, they have Big Thunder Railroad closed for refurbishment(of course it has been closed since the beginning of the year). So with this being a year out it is impossible to tell you what rides may be down for maintenance or other issues. As for cold again that depends on what your definition of cold is. Just last week it was in the 50's during the day and in many areas below freezing at night. We are now into the 70's during the day and 40's at night, with the rest of the week forecast to be in the high 50's to high 60's.

I don't know about the rest of the parks, but Disneyland is open in the winter, and the winter is usually a great time to go. You can take a look at the website for details about forecasts, but it rarely gets truly cold in Orange/Los Angeles Counties. You can see a schedule of attraction refurbishments here:
