jailbreaking is for iOS devices. For android, it is called "rooting". Doing these two things will give you access to all internals and allow you to do things such as change clock speeds, change voltages, change screen color, DPI, and most importantly, install apps that require root.

The gist of jailbreaking a tablet is that you can download applications that were rejected by the application store of the OS to be up on their application store, modify the OS, and basically get applications that normally you have to pay in whatever OS's store that you use for free.
