There are several reason that corn soup is white in color. as some of the other people have said there are 2 common types of sweet corn- yellow and white. The white corn is usually a little more tender with sweeter kernels. And the person who said that cream is used is also correct- the cream does contribute to the color. But another factor is that the inside of the corn kernel (the pulp) is actually white. So most of the corn is white it is just the outer layer that is yellow. All in all it is actually a combination of all of these factors that makes corn soup white instead of yellow.

Corn soup is usually made with cream, though some are made with pureed corn. The corn used is usually "white" corn, or as we know it in the south, "silver queen" corn. Yellow corn is more for eating on the cob and is a little on the tough side for a soup.
