The common ancestors you and your great Uncle's grandchild share are your great-grandparents and the grandchild's great-great grandparents. I believe this makes you second cousins, once removed because you are from different generations This chart might help make sense of things.

Generation 1: your great uncle & your grandparent = siblings Generation 2: one of her parents & one of yours = 1st cousins Generation 3: grand daughter & Shelby = 2nd cousins 5 - 25 years down the line, when (if) you both have children, her children will be 3rd cousins to your children. You add one to the degree (1st, 2nd, 3rd ...) for each generation. Maxi nailed it, Diane got what "removed" means right but missed where the granddaughter fit. You two are in the same generation, so you are second cousin with no removeds. You'd be first cousin once removed to the granddaughter's parent.
