Well it would depend on what you are trying to mean. First sentence states that you are lucky to have someone. And the second one means you are luckier to have the person than that person in having you. First one is stating a one way thing while the second one is stating that you are both lucky to have each other it's just that you are luckier.

"I want you to know how lucky I am to have you" is more grammatically correct. Also, remember to use periods to spell out the word "you."

The first one. I want you to know how lucky I am to have you. You could say: I want you to know how very lucky I am to have you.

Neither is correct because 'u' is not an English word. You mean: I want you to know how lucky I am to have you.

"how" with adjectives, "how many" with countable nouns, "how much" with uncountable nouns how much luck I have how many blessings I have how lucky I am

A sentence is either correct or incorrect. There is no such thing as more correct. Perhaps you mean which one sounds better.
