Stilton. Gorgonzola usually has a sour taste to me

It depend what I am using it for, for plain eating Stilton is the best, for cooking Gorgonzola, but as a chef I used Cambanzola, Manchego blue, Roquefort, Maytag blue and Danish blue cheese also, all very good in there own rights.

I like all cheeses, blue or not, but my personal favourite has to be Dorset Blue Vinney. It was actually "extinct" until a local cheese maker found a recipe for it in an old book and decided to make it again. It's like a creamy Stilton. http://en.wikipedia.org/wiki/Dorset_Blue_Vinney

I like both but the real creme de la creme is roquefort if you can afford it.
