As far as I know none, mainly because there inedible, they use there blood and bodily fluids for medical research, as they have curative properties, I saw one once in Florida, ugly thing, blue crabs, Dungeness crabs, in Chinatown and the Asian area you may see green and mud crabs from Vietnam.

Don't. Their habitat is under severe threat and their numbers are decreasing. Although they haven't been listed as endangered, certain species of horseshoe crab are under severe threat. Encouraging a further threat to their survival by eating them would border on the unethical.
