We don't have fatty liver, and I would remove the fat first. Slice them to 10mm thick, season them with S&P and dust with flour. Flash fry them both sides and remove. Add a little water to make a little sauce and return to the pan and fry for a few minutes longer and serve on toast for breakfast. Lambs Fry (liver) s by far the best Chetak

First off, learn to spell Viennoiserie properly with one S. If you are a beginner with no experience expect to earn minimum wage if you even get hired as a pastry maker. Often inexperienced bakers are hired for menial jobs and then must work their way up to pastry chef. In addition your pay will depend on where you live and what type of pastry business you wind up in. You could get a job in small bakery, a factory type bakery or a hotel. So I doubt anyone on YA can answer your question. You can google for job openings for pastry chefs in the area where you want to work and see if anything pops up.
