It won't do much if you keep the stock cam/intake manifold/exhaust manifold on an otherwise stock 350. Generally the stock cam is very tame, which seriously cuts into the performance potential of a good set of heads, so consider swapping intake/heads/cam (and taking the time to match the performance of each) at the same time, especially if you're paying for the work to be done!

Umm, from what head to what head? A Vortec from a 70's smog head will increase power significantly. Getting rid of Vortecs and swapping smog heads will kill power. Using 305 heads on a 350 may increase compression enough to cause detonation and require a lower temp thermostat and/or use premium gas. You haven't given us nearly enough info to answer the question any other way but generically.
