Depends on the pasta, and what you mean by complex. Either way, anything past an hour, and you're looking at a sorry meal. Anything past 2 hours should be considered garbage. The correct temperature will depend on the sauce, if any. Cream sauces break down at higher temperatures, with the oils separating out. If you are serving this to anyone but family, Health regulations will dictate the temperature, but overall, you want to keep holding time and temperature as low as possible..***:D
