There aren't a lot of different types of Cheddar cheese: mild, sharp, NY sharp; that's about it. None of them are used in most pizza or lasagna.

Cheddar cheese is never used in authentic pizza and lasagna recipes. Authentic recipes usually call for Italian cheeses such as mozzarella, asiago, provolone, parmesan, etc. I know many American pizza chains add shredded "cheddar" cheese to their blend of mutant artificially flavored pasteurized processed cheese-like substances, which is why most of what they serve is cr&p. If you like the taste of real cheddar cheese, feel free to add whatever kind you like to your recipe. They all tend to melt well. If you want it to TASTE even vaguely like Italian pizza or lasagna, I would avoid using too much sharp cheddar, and stick with the milder stuff for the most part.

It is your pizza and your lasagna so you can use any type of cheese that you want. Just be sure it will melt. Most cheddars are good melting cheeses. The longer a cheese is age, the harder it will become and those are not good for melting. There are really only 4 types of cheddar cheese: extra sharp, sharp, medium and mild and most of these can be found in white and yellow cheddars. However, Cheddar cheese would certainly not be the traditional cheese used for pizza or lasagna. Cheddar is fairly common in Macaroni and Cheese.

Cheddar Cheese isn't uses in pizza and lasagna. Pizza usually uses a cheese with a low melting point, so the cheese will stay somewhat liquid. Mozzarella is the most common. Lasagna usually uses a fresh cheese like ricotta, as well as mozzarella and Parmesan.
