Would be helpful to know what you have on hand. Soup and a sandwich is always a good lunch. Veggies with a dip. The dip can be almost any salad dressing that you have on hand. They would go well with a sandwich.

Grilled cheese sandwiches and tomato soup. Buy some canned tomato soup and throw it in a pot, as it heats up make grilled cheese (which is also pretty quick). :) Or tortilla pizzas: buy some tortillas and spaghetti sauce, and some pizza toppings (it doesn't have to be pepperoni for meat- deli meats will work too- and don't forget veggies and what not) and some cheese. Spread the spaghetti sauce on the tortilla, top with cheese + toppings, and throw in the microwave until the cheese melts.
