For projecting, I'm a fan of light lettering on dark backgrounds. It doesn't have to be white on black- having slightly less contrast can be easier on the eyes. For example, you could do a white on navy.

if your presentation is a formal one and the content in your presentation is very important, then you should go for a background color which is light otherwise the people's eyes will be focused on that background and they wont be able to concentrate on the content.
