I use the black vinegar, aged ginger and rock cane sugar to stew pig trotters. Black vinegar can be used as dipping sauce for 'seow loong pao' little small Chinese buns or gyoza/ potstickers . It can also be added to enhance the taste of egg flower soup with crab meat, or corn soup '
