It may be the type of beef you buy: buy one with a lean % of at least 90 (there are two numbers: the % of lean, and the % of fat. Both combined = 100%. For instance 80/20, 70/30). While the higher fat beef is more tasty, there's more shrinkage, and grease. Drain the grease, blot with paper towels, or drain, add a cup of water to the drained beef and boil it to remove additional grease, then strain it.

i have high cholesterol and a heart problem-mince is usually from fatty off cuts and other pieces of the animal not for general sale brown the meat on a high heat and in small portions place in a sieve you can then pour a kettle of boiling water over the mince

try to buy the 93% fat free hamburger, if using ground beef, when you've browned it, whether you threw onions or garlic or anything in there with it, pour the grease off into garbage or special can, line a colander with paper towels and pour the beef into the colander. let it sit take more paper towels and kind of dab around the beef on the top. or you might make beef patties or meat loaf, broil it off a rack in a baking pan where most of the grease will drip into the pan, you can put your beef on paper towels, turning them also this is what I do and it helps,

Fry, and then pour away excess fat, then add to recipe.
