A real oldie so you have probably read it but Treasure Island. The only change in viewpoint is during a time lapse towards the end. It only lasts one chapter but it has to change viewpoints briefly for the story to come together. (Quite beautifully I might add) Not really a sci-fi book if that's what you were looking for. Either way, definitely worth reading.

Try the Sevenwaters Trilogy. Any book that has dialogue has multiple viewpoints, but these are told in the first person, so POV is limited somewhat by that.

If you want a book with only 1 point of view, that would be someone's diary, but those aren't often fantasy. Even a diary can say, 'and then she said,' and give someone else's point of view. If you want only ONE point of view, the book has only one character. Sounds boring.

There's a great book which I couldn't put down. It's basically about 3 teenagers stuck in a sort of middle earth. Called Forgotten Emeralds it is available on Amazon as a book or for a Kindle.
