It won't fit in your crock pot. Put it in a covered roasting pan or cover it tightly with foil. Put 1.5-2 inches of water in the pan along with some celery carrots and onions a little salt pepper and bay leaves. Cover the roaster and put it in the oven at 200 degrees for 10 hrs. It will be fall apart tender and super moist. @Timothy, an arm shoullder roast is beef, not pork. Your thinking of a pork shoulder roast which is delicious but a different thing.

I doubt you will find a crock pot that will handle an 11lb anything.

Try coconut cream, almond milk,parsley,sweet paprika,ginger,garlic,black pepper,stevia plant sweetner instead of sugger, very small touch of cinamon and coriander soak pork in the mixture for around 30 minutes then throw in slow cooker and set on high for 6 hrs while turning every 1hr

Slow 8-10 hours. Don't keep checking it though as lifting the lid adds 20 minutes to the cooking time. It may actually need longer to cook as that is a very large piece of meat and you might find yourself 'restarting' your cooker if it's only limited to 8 hours. Make sure you have enough liquid but not too much.
