To answer your question about pairing artichoke and figs, I would suggest trying brie for the cheese. You could add beans to your quesadilla, along with any veggies that you enjoy eating. Try experimenting! You could dip your quesadilla into guacamole and salsa to add some flavor to a normal cheese quesadilla as well. You may want to try adding pepper jack cheese or jalapeno slices.

I lightly saute onion, garlic and bell pepper, and add it to my quesadilla filling.. I would NEVER just use cheese.. and then top it with a healthy dollop of fresh quacomole.. mmmmm! maybe some tomato salsa...

I had some at a local Kalamazoo restaurant called California quesadillas that were fantastic. They had black beans, corn, avacado and cheese. Simple and delic
