Of course, it is part of the first year in film school that we study the camera angles used by film directors from the beginning of the film era. We spent time watching two to three films each week and then discussed Ad infinitum, how each scene was set up to best follow the spirit of the scene as written by the screen writer and the vision of the director. We also used text books like the "Five C's of Cinematography" We took tons of notes and when we were filming our senior project, well all made sure that each scene was important to the content of the film. This included camera angles, scene lighting, staging and editing. Editing includes music, voice overs, Foley and special effects.

Instinct! That's what makes a good film director. Plus, of course, experience, practice and watching other diresctors work.

You say "How do directors and filmers know what angles to have the cameras to make it look professional?" ermmm - they are professional. How could it look any other way. It is their profession, they rose within that profession because they are good. Otherwise they wouldn't have made it in their profession.
