It's a well know fact that you have more change of getting food poisoning from bbq food, than any other. You can reduce the risk, especially in chicken by cooking it in the oven first until its almost done, then finishing it off on the bbq. You should always wait for the flames to die down, and ensure the coals have turned white before you start cooking. Also turn food often, and check by putting tip of knife into anything before you serve to ensure that it's thoroughly cooked. Fish I always wrap in cooking foil so that it doesn't cook too quickly or dry out.

Lastly, you need to maintain the consistency of the ingredients you use to marinate the meat for barbecue. Too much of certain ingredients may not agree with some people’s digestive system as each person has a different metabolism.
