Nutrition is very important. The federal guidelines want you to know what elements are to be served on a plate. (grain, fruit, vegetable, protein) They may also want you to be aware of allergies of what children can or can not have on their plate. sanitation codes when it comes to cooking and serving food.

How do you make good, nutritious food on a tight budget and get the kids to eat more vegetables, even if they are picky. (disguising them, making them interesting patterns on the plate, making it look fun and taste really good!) What are healthy snacks to prepare. gibe a simple meal plan

They will probably want to know if you are familiar with the CACFP guidelines. That's the federal program that pays for meals in Head Start. They will probably want some healthy menu ideas. You will also need to be familiar with basic sanitation and have, or be able to get, whatever food handler's certificate or training is required in your area. They will also need to hear how efficient you are at bookeeping and record keeping because these are a critical part of the job.
