Ingredients 1¾ cups gluten-free flour ⅔ cup sugar (brown, white, stevia, your choice) 1 tsp. baking powder ½ tsp. vanilla 1 cup (usually about 3) SUPER ripe bananas, mashed up ½ cup oil (I LOVe coconut oil but vegetable is okay too!) 2 eggs **Nuts are on the safe list for gluten-free eaters, we simply avoid them for other reasons. Feel free to chop them up and add a cup or so to the recipe! Instructions Preheat the oven to 350 degrees In one bowl, combine mashed bananas, oil, vanilla, and eggs. Beat this together until it is well combined then move on to a second larger bowl. In bowl #2, combine all dry ingredients. Mix thoroughly. to bowl #2 (dry ingredients) add your wet mixture (bowl #1). Mix well but only until the items are incorporated. Pour into a greased bread pan. Bake in the oven at 350 degrees for 50 minutes to 1 hour. Reluctantly allow your bread to cool for at least 10 minutes before diving-in!
