In shows like that they are probably falling for real most of the time. If an actor falls from high up, they will cushion it, or if they are doing something like face planting into the ground they might, but if you are just falling from standing you do it for real, sort of. Part of what you learn in acting school is stage combat, which is not just hitting, but sword fighting and "tumbles". Tumbles are basically different ways to fall without actually get hurt, it has a lot to do with how you move your shoulders to take the impact more gently.

who knows whast they do for sure; to fake a good fall watch a puppet fall. know all of your joints how they fall on each one of them to roll watch thepuppet. then imitate it or scuf your feet and really trip

They do a bit of both, when having to fall very hard they have cushion bit when its a light fall they dont use cushion

If you don't see the surface they land on (they fall behind a couch, or out of frame), then they put mats down for the actors to land on.
