Usually a member of the family would contact the bank. They wouldn't know otherwise unless someone got their papers and started making contacts.

an order of probate is required this is then given to the bank

The executor of the will would typically contact the bank in order to settle any accounts there. This is typically a family member. There are no social security numbers in Canada. Canada uses a social insurance numbers.
