Kudos to you and your family on Meatless Mondays! :) I am a 3 year Vegetarian and we looooveee to cook at my house! Some of my family and friends favorites that we cook are: Betty Crocker: Vegetable Jambalaya Betty Crocker: Cheese enchilada Verde (usually a request at family functions) Betty Crocker: Vegetarian Black and White Bean Chili (I like to add some Fritos, Cheese and Sour Cream for a "Frito" pie type chili when I prepare my personal bowl.) I have so many more but those are easy favorites. You can find the recipes on the Betty Crocker Website. I love Betty's recipes because they are simple yet complex. They are all easy to fix but never bland and full of great flavor! They (unlike a lot of other recipes I have fixed) don't need any tweaking. You really can't go wrong with Betty Crocker. Good Luck!

Vegetarian lasagna is pretty good. Also, fried squash, zucchini. Amy's brand has good vegi chili.

Build your own tacos and burritos. You can make a meatless chili on the weekend when you have a little time (toss in zucchinis and spinach or chard to give it a bit more veg. vitamins) then put it in a container in the freezer to be defrosted on taco day. Then it's just a matter of chopping up tomatoes, cheese (if you do cheese), lettuce/cabbage, jalapenos, corn, avocado/guacamole, salsa or taco sauce, and letting everyone make their own. Stuffed portobello mushrooms. Falafel sandwiches (I like pita bread but people also do the flatbread wraps/lavash).

grilled cheese and tomato soup. Vegetable stir fry with rice or over noodles vegetable soup Cottage cheese with fruit and baked potato vegetarian chili

Portabello mushrooms are a good sub for meat. Stuff with ricotta. Very quick and easy.
