Self built is good for all the reasons you state but I love using a laptop for everything - then I always have everything I need no matter where I go. Macbook Pro is top of the line for a laptop and you can always use boot camp to run Windows and all the software you are used to. I personally just bought a Thinkpad T540p laptop with a screen resolution better than the Apple retina display and it's cheaper than a Macbook too. (I also have a second 21" monitor on my desk) So for me the choice is easy, the laptop - however, the iMac is a gorgeous desktop computer so if you don't need the portability that is a good choice.
