It depends on the bottler. Some use ground water, some use springs, etc, etc. Basically they'll use any water they can find except sea and river water (because rivers tend to be pretty gross). They then pump the water to their processing plant where they purify it until it has low enough levels of contaminants (minerals, mostly) to meet government regulations. Some of them also add trace amounts of minerals to the water to make it taste better.
