A veggie, fruit, or even meat and cheese platter would do just fine. Pick one up from the local grocery store. That's what my mom would use for work potlucks.

How about a baked pasta dish you can make ahead of time, like a baked ziti, that you can just microwave when you are there. Otherwise how about a cold cut and cheese tray with dinner rolls.

My go-to potluck ideas that involve at least some preparation are these: ...roasted veggies (if your grocery has them, Whole Foods does, buy chopped mixed veggies, coat with oil, lay out in single layer on baking pan, sprinkle with salt, then bake at 350-425 F till starting to brown a bit ...veggie salad (buy or chop veggies, then coat with Ranch dressing) ...fruit salads (chop up any kinds of veggies, and serve together...adding some oranges or bit of orange juice then stirring will prevent any browning on apples/pears/etc) ...Greek salad (buy a head of Romaine lettuce or a bunch from the open bin... chop and lay in large bowl...top with (in order) chopped tomatoes, crumbled feta cheese, small can sliced black olives...take bottled Italian Dressing with you, and dress at last minute more ideas here too: https://www.google.com/search?q=quick+easy+potluck+idea s . .
