You bring the water to a rolling boil, then add the Tea, then turn the heat down to it's lowest setting and let it simmer for about 10 minutes. If you boil off too much water, that's going to also boil off some of the volatile oils and other things in the tea that are good for you. Boiling for more than 10 minutes may also cause too many of the enzymes and other substances to break down. There's no need to eat it, just make tea the normal way and it'll be good for you.
