Too much rum will not affect the texture that is for sure, it would only last a stronger taste. If you have followed all of the instructions then it would be ok H-man

My sister made this very cake and when I asked to try it she told me she threw it out because it came out 'weird'. I just called her and she said it was chewy like a half baked cookie or something. She said it tasted okay but thought she had messed it up somehow so she just tossed it. So it sounds like you guys did it right...maybe that texture is different so people don't automatically dislike it for being fruitcake...I say if it tastes good then it is. Now I really want to try it for myself!
