That applies only to simple DC motors. And you can change the poles via use of a commutator.

If using electrmagents we reverse the current direction. If using prmanent mangets, so can't swap the polea, so instead we reverse the direction of the current in the coil. This is doens using a commutator which autimatically swaps the coil connections each half-revolution.
