depends on aircraft in question. width of wings. weight etc. most small lightweight 2 seater craft needing at least 1 mile for safety reasons though can stop and land a great deal shorter. water depth needs to exceed pontoon depth at least 5 times to allow for wave and wind depressions making for shallow parts. ( troughs etc) so as to minimise risk of contact with subsurface. better off contacting a company that operates such craft eg NZ based.

Both answers depend entirely upon the specific model of plane in question, how heavily it is loaded and the wind as well as current and wave height. As a rule, float planes can land much shorter than the distance required to take off. If there are obstacles to clear, such as tall trees, the required distance is much greater. A Cessna 206 needs at least 1,500 feet for the water run and 2,000 feet or more fully loaded, plus extra distance to clear obstacles on climb out. A DeHavilland Beaver only needs half that distance. A turbine Otter, even less. As far as depth, 2-3 feet is sufficient, but more is safer.
