They're actually very healthy, especially when you add in all those extra veggies that you mentioned. This way you're getting your protein from the eggs and sausage, and part of your servings of vegetables for the day :)

Whole eggs (yolk and all) are perfectly healthy (actually a superfood), most notably quality, authentic "organic" free-range ones.

I have heard that you shouldn't eat more than 2 eggs a day. However, there are infinitely worse things to eat than eggs. Your omelettes sound perfectly fine to me. The turkey sausage is relatively low in fat, and the bell peppers and especially the cayenne pepper made from them are the richest natural sources of vitamin C.

You will hear "evidence" both sides. Omelets kill chickens so they are HORRIBLE for them.
